Easter Soup
1lb Ground beef
1lb Lamb
Bouquet Garni
1 onion chopped
2 carrots roughly chopped
2 celery stalks roughly chopped
6 egg yolks
juice from half a lemon
1 heaped tsp chopped fresh Marjoram
Salt and Pepper
Thin slices of ciabatta
Paemesan Cheese
Make the meat stalk from the beef and and lamb, in a large stalk pot cover meat in water and add the Bouquet garni, onion, carrot, and celery. Bring to a boil , then turn down and genrly simmer for about three hours . Strain the stalk and skim off the fat, Reserve the meat you can serve this shredded for your main course with green vegetables or salad and potatoes. Toast several slices of ciabatta bread and line your soup bowls with them. In a large bowl beat the egg yolk and lemon juice pour the stalk over the beaten egg and stir well. Pour back into stock pot and stir over very gentle heat till the soup thickens. Once thickened add herbs and season to taste, ladle over the toast and grate parmesan cheese on top.
